What you need:
Half a cauliflower (70p/cauliflower
25g Butter (£1/250g)
25g Plain flour (35p/500g)
300ml Milk (40p/568ml)
50g cheddar cheese (£1.60/250g)
Salt
Pepper
What to do:
- Warm the butter in a saucepan until melted. Stir in the flour and heat for 2mins, stirring constantly on a low-medium temperature.
- Next start to gradually add the milk to the mix, very slowly and stirring all the time to prevent lumps from forming.
- When all the milk has been added, continue heating the mix until the sauce has thickened. Continue to stir to prevent lumps.
- When the sauce is smooth and has thickened, add most of the cheese and melt into the sauce. Season to taste with salt and pepper.
- While the sauce is being made, cut the cauliflower into florettes and either steam or boil for 5-7mins until soft. Then drain and add to the thickened sauce.
- Put the cauliflower cheese mix into a greased oven-proof dish, sprinkle over the rest of the cheese and put under a hot grill for a couple of minutes until the cheese turns to a golden brown.
Make it healthier:
1) Use skimmed/semi-skimmed milk
2) Use reduced fat cheese
